Ingredients

  • 1/2 cup sun-dried tomatoes, packed in oil, drained

  • 1 1/2 cups heavy cream

  • 1/2 cup freshly grated Parmesan cheese, plus more for serving

  • 1 pound pasta of your choice (penne, rigatoni, or similar)

  • Fresh parsley or basil, chopped, for garnish (optional)

  • Pinch of red pepper flakes (optional)


Instructions

  1. Season chicken breasts with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

  4. In the same skillet, add minced garlic and cook for about 30 seconds, or until fragrant.

  5. Add sun-dried tomatoes to the skillet and cook for 1-2 minutes.

  6. Pour in heavy cream and bring to a gentle simmer. Reduce heat to low.

  7. Stir in the Parmesan cheese and cook until the sauce thickens slightly.

  8. Slice the cooked chicken breasts and add them back into the skillet with the sauce.

  9. Cook pasta according to package directions until al dente. Drain.

  10. Add the cooked pasta to the skillet with the sauce and chicken. Toss everything together until pasta is well coated.

  11. Garnish with fresh parsley or basil and an extra sprinkle of Parmesan cheese, if desired.
