Ingredients
-
1 pound boneless, skinless chicken breasts
-
1 tablespoon olive oil
-
1 teaspoon salt, or to taste
-
1/2 teaspoon black pepper, or to taste
-
2 cloves garlic, minced
-
1/2 cup sun-dried tomatoes, packed in oil, drained
-
1 1/2 cups heavy cream
-
1/2 cup freshly grated Parmesan cheese, plus more for serving
-
1 pound pasta of your choice (penne, rigatoni, or similar)
-
Fresh parsley or basil, chopped, for garnish (optional)
-
Pinch of red pepper flakes (optional)
Instructions
-
Season chicken breasts with salt and pepper.
-
Heat olive oil in a large skillet over medium-high heat.
-
Add chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
-
In the same skillet, add minced garlic and cook for about 30 seconds, or until fragrant.
-
Add sun-dried tomatoes to the skillet and cook for 1-2 minutes.
-
Pour in heavy cream and bring to a gentle simmer. Reduce heat to low.
-
Stir in the Parmesan cheese and cook until the sauce thickens slightly.
-
Slice the cooked chicken breasts and add them back into the skillet with the sauce.
-
Cook pasta according to package directions until al dente. Drain.
-
Add the cooked pasta to the skillet with the sauce and chicken. Toss everything together until pasta is well coated.
-
Garnish with fresh parsley or basil and an extra sprinkle of Parmesan cheese, if desired.
-
Serve immediately and enjoy.
Notes
Variations: For a lighter option, substitute half-and-half or milk for heavy cream (the sauce will be less thick). Add vegetables like spinach, artichoke hearts, or bell peppers for extra nutrients.
Serving Tips: Serve with a side of garlic bread or a fresh green salad. A sprinkle of red pepper flakes can be added to the sauce to provide a subtle kick.
Intolerances and Allergies: To make this recipe gluten-free, use gluten-free pasta. If you’re dairy-intolerant, substitute the heavy cream with coconut cream or cashew cream for a similar creamy result, and use a dairy-free parmesan cheese. Check all ingredients for allergens.
Taste Adjustments: Adjust salt and pepper to taste. If the sauce is too thick, add a little milk or pasta water to reach desired consistency. Use more or less sun-dried tomatoes, garlic or red pepper flakes to taste.
